The history of the London whisky distillery Bimber starts somewhere in the last century in Poland. The grandfather of the founder and master distiller of Bimber distills his own, illegal spirits. He passes on his knowledge to the next generations, including grandson Darius. And that knowledge moved with Darius to London in 2003, who set up a successful company there. However, Darius’s passion for whisky and distilling were always at the forefront of his mind, and in 2015 he started his own distillery, based on traditional methods. In September 2019, this resulted in the bottling of Bimber London Single Malt whisky. Bimber is Polish for 'moonshine' or 'illegal spirit'.
