Murray McDavid approaches the bottling of single malt whisky differently from most other bottlers. The company goes back to the way top wines find their way to the bottle. So no single cask bottling, but bottling of whisky from the same batch that has matured in different, carefully selected casks. It is no coincidence that these are often former wine casks.
The ripening in the casks selected by Murray McDavid takes place at the Coleburn Distillery in the Speyside.
A blended whisky, a Crafted Blend even, according to bottler / blender Murray McDavid. The youngest of the whiskies in this Air Leth is 29 years old. It is not known which whiskies have been blended in this bottling. But it is an interesting dram! At 50%.
This 12-year-old Blair Athol bottling from Murray McDavid has been released in a limited edition in 2021. This bottler specializes in matching single malt whisky and the casks in which it is matured and finished (here: finished in oloroso casks). (46%)
Speyside distillery Dailuaine is not very well known, although it is there for about 170 years. Their experience in whisky-making together with Murray McDavid's cask knowledge resulted in this bottling: a 12-year-old malt finished in Sauternes casks. 50%
This Linkwood single malt whisky first matured in ex-bourbon casks, and then was finished in bourbon casks again, but then in organic 1st fill Koval casks. That gives this bottling from Murray McDavid just that extra touch. 8 years old and bottled at 46%.
Murray McDavid used the blended malt Rìgh Seumas I as the basis for this number II blended whisky and added various malt spirits and 1 grain whisky from Girvan. All whiskies matured together on a bordeaux cask to a full and smooth blend.
Three Speyside single malt whiskies have been combined here by Murray McDavid: Glen Moray, Craigellachie and Miltonduff. The youngest is 8 years old, and all three matured in a different kind of cask. Bottled together at 46%. That is The Speysiders.
You don't often find a blended whisky with 50% single malt and 50% grain whisky. This Young & Old by Murray McDavid is one of those. The younger is a 7 year old Caol Ila that matured on a PX cask, the grain is an old North British. A special blend!
