Murray McDavid approaches the bottling of single malt whisky differently from most other bottlers. The company goes back to the way top wines find their way to the bottle. So no single cask bottling, but bottling of whisky from the same batch that has matured in different, carefully selected casks. It is no coincidence that these are often former wine casks.
The ripening in the casks selected by Murray McDavid takes place at the Coleburn Distillery in the Speyside.
This 12-year-old Blair Athol bottling from Murray McDavid has been released in a limited edition in 2021. This bottler specializes in matching single malt whisky and the casks in which it is matured and finished (here: finished in oloroso casks). (46%)
Speyside distillery Dailuaine is not very well known, although it is there for about 170 years. Their experience in whisky-making together with Murray McDavid's cask knowledge resulted in this bottling: a 12-year-old malt finished in Sauternes casks. 50%
Bottler Murray McDavid reverts to the maturation process of top wines for the maturation of whisky under the motto 'The Art of Maturation'. This Dailluaine single malt whisky is finished in small (quarter cask), organic bourbon casks from Koval. (44,5%)
In their series Cask Craft bottler Murray McDavid releases this Strathdearn single malt whisky. It was finished in sherry casks and the bottler gave the malt the keywords 'fruity & spicy'... But wait a minute! Strathdearn? Well, that's Tomatin. (44.5%)
You don't often find a blended whisky with 50% single malt and 50% grain whisky. This Young & Old by Murray McDavid is one of those. The younger is a 7 year old Caol Ila that matured on a PX cask, the grain is an old North British. A special blend!
