The Holyrood Distillery opened its doors in 2019, making it the first distillery in central Edinburgh in nearly a century. The modern distillery was set up by a number of people with extensive experience in the whisky industry who want to break new ground in distilling, 'new grounds that reflect the dynamism and diversity of present-day Edinburgh'. Their first bottlings were released in 2021.
Holyrood Distillery, founded in 2019, produces single malt whisky based on various old Edinburgh brewing and distillery recipes. As a result, just about every bottling has its own style. This Pitch matured in oloroso casks and is bottled at 49.4% ABV.
