The Holyrood Distillery opened its doors in 2019, making it the first distillery in central Edinburgh in nearly a century. The modern distillery was set up by a number of people with extensive experience in the whisky industry who want to break new ground in distilling, 'new grounds that reflect the dynamism and diversity of present-day Edinburgh'.
The Holyrood Distillery makes new make spirit based on old Edinburgh brewing and distillery recipes. You can see that described on the label of this New Make edition, for example. Here, 2 types of yeast and a relatively long fermentation time are used.
