De Starward-distilleerderij opende zijn deuren in 2007 in Melbourne, Australië. Sindsdien maken ze single malt-whisky volgens de eigen filosofie: richt je op de smaak en volg daarbij alleen maar je intuïtie; maak gebruik van wat je in de buurt vindt. En neem jezelf niet al te serieus. Starward zoekt bijzondere (meestal wijn-)vaten om de whisky in te rijpen. Het klimaat in Melbourne maakt korte rijpingstijden van vaak niet meer dan 3 jaar mogelijk. Volgens Starward is hun whisky uitermate geschikt voor bijvoorbeeld cocktails.
The Australian Starward Distillery is almost 15 years old. In that time they already have released quite a few quirky bottlings. Here's one of the last, the Unexpeated. The single malt whisky aged in red wine casks and is finished in peated Islay casks.
This is the first Australian single malt whisky, specially bottled for the Dutch market we know of! Like almost all Starward whiskies, this 4-year-old Starward from Melbourne matured in a red wine cask (Barossa, American oak). At 57.5%.
'Whisky done differently' is the motto of the Australian Starward distillery. Their Fortis bottling lets you taste what they mean by that. The aging in red wine casks of American oak gives this single malt whisky a rich palette of full flavors. (50%)
