Brothers Phil and Simon Thompson were the founders of the whisky bar at Dornoch Castle Hotel, Scotland, one of the most famous whisky bars in the world. In addition, they also started releasing their own whisky bottlings. And since 2017 they even have their own whisky and gin distillery in Dornoch. Their first Dornoch single malt whisky bottlings were released in 2022
