Founded in 2008, KOVAL is the first distillery in Chicago since a century and a half. The KOVAL Distillery opts for an organic production process, from raw materials to bottling. The distillery makes various types of whiskey (= American spelling) such as bourbon and rye, but also whiskey from millet. All whiskeys are 'single barrel', therefore bottled per barrel. In addition to whiskey, KOVAL also produces Gin, liqueur, vodka and brandy.
A whiskey distilled from millet! This bottling from organic distillery KOVAL from Chicago is therefore not only gluten-free, but it matured on heavily charred American oak and is bottled 'single barrel'. That certainly made us very curious!

Made from 100% rye, this whiskey from the organic KOVAL Distillery in Chicago. Not filtered, and bottled from one cask (single barrel). A fresh, light whiskey with sweet notes '... and a kiss of spice in the finish,' as one reviewer said.
