The first reference in old documents to Scotch whisky is that in which the Lindores abbey in the Lowlands is mentioned with the date 1494. Distilling whisky at that time was often still done by monks. For centuries afterwards, no whisky was distilled in or near the abbey. But since 2018, new make spirit has been flowing from the copper stills of Lindores Abbey Distillery, spirit distilled from regional barley. And in 2021 the first bottlings of Lindores Abbey single malt whisky appeared.
