Since the Prohibition in the 1920s, whisky has not been distilled in Texas. Until in 2009 in an old welding shop converted into a distillery in Waco, Balcones Distilling began to run. Founded by a group of friends out of enthusiasm for traditionally distilled whisky with carefully selected ingredients. Balcones makes bourbon, as well as single malt and rye whisky. And their speciality: whisky from the rich, oily 'blue corn'.
In August 2025, the owner, Diageo, halted production, with plans to restart in June 2026.
